Easy Peasy Tomato Soup


2 pounds of tomatoes (I used fresh ones from our garden)

4 garlic gloves

1/4 red onion

1 Tablespoon olive oil

1 Tablespoon Balsamic Vinegar

Basil to taste

Salt & Pepper to taste

2 Cups Vegetable Broth or Stock


Cut tomatoes, place in shallow pan with cut side facing down.  Add onion, garlic and herbs. Drizzle with olive oil and vinegar and season with salt and pepper.  Bake 45 minutes at 375 degrees.  Blend in blender and add broth.  This is super yummy to dip Sesame Ezekiel bread into it- either cold or chilled.  Should yield about 5-6 servings.  Simple and delicious!
