Gluten Free Sesame Chicken

When fall hits, I whip out our Crockpot from its secret underground lair and plop it on our already overcrowded countertop to work its magic.  With the craziness of the kids’ school & activity schedules, you can’t beat the option of just throwing meats, seasonings and broth or sauce in that trusty ol’ Crockpot in the morning and simply spooning it out hours later.  This is one of my favorite slow cooker recipes tweaked to be made gluten-free.  Bon appetit!

Gluten Free Crockpot Sesame Chicken –Serves 4

Prep time: 10 minutes tops!

Cook time: 4 + hours

  • 6 boneless/skinless chicken thighs
  • 1/2 an onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup pure honey
  • 1/2 cup tamari
  • 4 tbsps tomato paste
  • 2 tsp sesame oil
  • 3 tsp Tapioca Starch
  • 1/4 cup water
  • 2 cups broccoli florets, chopped into bite-sized pieces & 1 tsp sesame oil for stir frying
  • Short grain or jasmine brown rice
  • Toasted sesame seeds, to serve.

Place the thighs in your Crockpot.

Combine the onion, garlic, honey, tamari, tomato paste & oil in a bowl and then pour over the chicken.  Cook on low for at least 4 hours, preferably 6, turning occasionally to ensure the thighs cook evenly.

20 minutes before you want to serve, prepare the rice according to packet instructions and remove the chicken from the slow cooker.

Combine the tapioca starch and water in a cup or small bowl and then add it slowly to the remaining sauce in the Crockpot.  At this point, turn the temperature up to high to allow the sauce to thicken.

Add the  chicken back to the thickening sauce, turning the mixture occasionally.

In a skillet or frypan, heat 1 tsp of sesame oil over a medium-high heat. Stir fry the broccoli pieces to your liking (I like my broccoli firm, the hubs like his kind of mushy so I remove mine several minutes before finishing up with his).

Lay the broccoli over the rice, and top with the chicken/sauce mixture and then sprinkle with sesame seeds.   As you can tell from the pic above, I skipped out on the sesame seeds for that batch- not because I don’t loooooove sesame seeds but because we were all out and I forgot to pick up a bottle while doing errands that day. Le sigh.
