Healthy Brownies from Scratch: A guilt-free recipe

I love brownies with a white hot passion.  I’m especially fond of dark chocolate, fudgy brownies (I’m drooling just typing that) so you can imagine my skepticism when I heard you could craft a delicious made from scratch brownie with black beans & avocado as the base ingredients.  

No flour needed? Pshaw, I thought.  But in my quest to indulge my craving for brownies without loading up on sugar & calories, I decided to open my mind and give it a try. I printed out several different healthy brownie recipes and decided to come up with my own brownie creation- one with a little kick.  

Don’t like your brownies with a kick of spice? No worries.  Omit the cayenne pepper.  Experiment with spices and maybe liven it up with cinnamon instead.  

Feel free to experiment with my recipe and come up with a brownie more to YOUR liking.  Just be sure to have a GOOD blender or food processor on hand to best puree the black beans. 😉

 

 

Ingredients for Healthy Brownies from Scratch:

1 – 15 ounce can of black beans, rinsed and drained

1 large egg

2 large egg whites

1/2 of large extra ripe avocado (make sure it’s EXTRA ripe!)

1 teaspoon of coconut oil

2/3 cup unsweetened cocoa powder (I used Ghirardelli brand)

1/4 tsp baking powder

1/4 tsp baking soda

1/4 teaspoon himalyan salt

1/4 teaspoon cayenne pepper

2 teaspoons pure vanilla extract

3 tbsps SweetLeaf SugarLeaf stevia & cane sugar mix

1/3 cup Ghirardelli 60% cacao chocolate chips

Instructions for making Healthy Brownies from Scratch:

Step 1: Preheat oven to 350 degrees Fahrenheit.  Grease an 8X8 inch baking pan.

Step 2: Place all ingredients EXCEPT chocolate chips into blender or food processor (I recommend a food processor).  Process or puree until ingredients form a thick & smooth batter. If the batter is too thick to process/puree, then add in a teaspoon or two of water.  The batter needs to be very thick in order to make really fudgy brownies.

Step 3: Fold in chocolate chips to the batter.

Step 4: Pour batter into greased pan.

Step 5: Bake for 25-35 minutes or until knife inserted in center comes out somewhat clean and top of brownies begin to crack.

Step 6: Cool pan completely on wire rack then cut into 12 individual brownies.
