Looking for a 21 Day Fix approved dessert?
I fell in love at first bite – and I’m betting you will too! All it takes is a few simple ingredients and a wee bit of slicing and mixing. Easy peasy!
Best part: it can be a completely yellow (carb) free dessert if you skip on the chocolate chips…and will be the most tempting way for you to get one of your reds (protein) in!
NOTE: You’ll need to marinate the strawberries at least 1-2 hours before serving for BEST taste, so plan ahead!
Quart of strawberries, hulled and sliced
8 Stevia packets (or about 3 1/2 teaspoons if you have a bag instead)
2 tbsps Balsamic Vinegar
Lowfat Ricotta cheese (use one red container to measure)
1 tsp vanilla
Gently mix the sliced strawberries with 2 tablespoons of balsamic vinegar & 2 stevia packets (or 1/2 tsp). Marinate the strawberries for at least 1-2 hours.
When ready to serve, mix one red container of lowfat ricotta cheese with vanilla & 6 packets of stevia (or 3 tsps). Top with a purple container filled with marinated berries (you’ll likely have some leftover for a later indulgence). You could even achieve great berrylicious taste with just 1/2 a purple too.
Optional: Top with a bit of slivered almonds and stevia sweetened dark chocolate chips (be sure to use Fix measurements and count this in your daily tally). Kick back and enjoy!
